Non-egg red potato salad

We visited my parents for the 4th of July weekend in FL. We had a cookout the day of with family, neighbors, and my best friend. Among the many food items was potato salad. It is such a classic dish for summer and cookouts and the like. My mom and I hunted through her giant recipes binder for the perfect one. Eggs don't like me so I like my potato salad to be without boiled eggs :)



Potato Salad
From a friend of my grandfather's
Ingredients:
Bag of red potatoes
1 cup reduced fat sour cream
1/3 cup light mayonnaise
3 green onions green onions, chopped
Salt, celery salt and pepper to taste

Cut potatoes into 1/4's. Generously salt water and boil potatoes, then let cool. In a small bowl, stir together sour cream, mayo, salt, celery salt, and pepper. After potatoes have cooled awhile add some of the mixture to the potatoes and mix until it is dressed to your liking. Stir in green onions. Chill for several hours. You might only use half of the dressing mixture but save it so if it looks a little dry after chilling then you can add more.

It was completely wonderful! I was disappointed we weren't around in the days following to have the leftovers. This potato salad was brought to my grandmother's house after my grandfather's funeral several years back and my mom asked the friend of my grandfathers what was in it so we could recreate it. She said it tasted pretty darn similar which is success in my book!

Make some before the rest of the warm days are gone... would be great at a tailgate! Hope you enjoy it too!

  1. I just picked a bunch of red potatoes from the neighbors garden and have wanted to find a good way to use them! I often make a pasta salad that uses the mixture of sour cream and mayo and it's nice and tangy :) Thanks for a simple recipe- hope you have a nice weekend!

  4. I absolutely love this recipe (and so do my friends). I found it on Pinterest which, of course, led me here.

    I've made it twice. I didn't use light anything (not my style) and figured out I didn't have celery salt, so instead subbed in celery seed. It is a delicious and unique potato salad that captures everyone's attention.
