Tuscan Turkey Sausage and Bean Soup

I have another crock pot recipe to tell you about! Surprise surprise right? I do love me some crock pot meals and this one I dare say is definitely one of my favorites!

I found the recipe here at Recipe Girl where I have found many other wonderful recipes. 


Crock Pot Turkey Sausage & Bean Soup
(slightly adapted from recipe girl)
Serves 6 with 1 1/2 cup servings

Ingredients:

12 oz turkey kielbasa sausage, cut into 1/4 in rounds
2 cloves garlic, minced
1 small onion, chopped
2 large carrots, chopped
2 stalks of celery, chopped
3 cups fat free low sodium chicken broth
15.5 oz can kidney beans, rinsed and drained
15.5 oz can northern beans, rinsed and drained
14.5 oz can italian seasoned diced tomatoes
1/2 cup water
1 tsp dried basil
shredded cheese for topping (optional)

Instructions:

Combine all ingredients in crock pot (except cheese) and cook on low for 8-10 hours.


Top with cheese if desired. I actually served this on top of some brown rice  which was wonderful so in that case we had more than 6 servings.

If you use the serving size above of 1 1/2 cups, soup is 241 calories acccording to recipe girl. Woohoo for yummy and healthy too! Doesn't get much simplier than this either! I chopped up the onion, celery stalks, and carrots the night before and put them in tupperware filled with water in the fridge so I didn't have to chop in the morning. I stored the chopped sausage in a ziploc in the fridge overnight. It made the assembly pretty quick in the a.m. before work.


The leftovers were wonderful too and I think it could freeze nicely also! Let me know if you try this and if you have any awesome crock pot recipes BRING 'EM ON!
