Oreo Truffles

If you need a no fail, make ahead, and widely loved dessert... look no further! This recipe was given to me by one of my best friends, Emily, in my recipe scrapbook I received as part of my bachelorette (Thank you Em!). I have since made it a ton and passed it on to others! 


Oreo Truffles
makes about 4 dozen
Ingredients:

1 package of oreos finely crushed (about 4 1/4 cups)
2 packages Bakers semisweet chocolate squares (8 squares each), melted
8oz cream cheese, softened - I used the reduced fat neufchatel cheese

Mix 3 cups of the crushed oreos and the cream cheese. Form into 1 inch balls. Dip in melted chocolate and place on wax paper covered baking sheets/glassware. While chocolate is still hot sprinkle remaining crushed oreos on top. Refrigerate 1 hour or until ready to serve. Store in tightly covered containers in fridge.

Tips: The reduced fat cream cheese tastes just the same and then you can just eat more without feeling as bad :)  I found that I don't need an extra cup and a 1/4 to sprinkle on top... a half cup will do it so you don't really need to crush the entire package of oreos. I also don't need all 16 squares of chocolate... I normally use 14. These keep really well and you can freeze them. 


These are soooo delicious and addicting! You will just be popping them in your mouth wondering why you didn't make them sooner. (you're welcome)
