Peanut Butter Yogurt Fruit Dip
I first made this dip for the first cookout of the summer at our friends Katie and Kyle's but since then have made it a few more times (beach trip and baby shower) because it is so easy, delicious and healthier than most fruit dips. As you could have guessed from the name you only need 3 things!
Peanut Butter Yogurt Fruit Dip
Serves 4
Ingredients (consider doubling or tripling as needed):
-Fruit for dipping - grapes, strawberries, pineapple, blueberries, apples and bananas are all good choices
-1/3 cup creamy peanut butter (I've used reduced fat and I've used natural before)
-Heaping cup of vanilla non-fat or low fat yogurt
Combine peanut butter and yogurt. I found the easiest way to do this is by hand whisking or stirring really well. I haven't tried using an electric mixer but that would probably work too. Chill for at least an hour and serve with fruit for dipping. Every time I have made this I made it for a crowd so I have doubled the recipe. It keeps for several days in the fridge and can be made ahead of time.
Yes I served the strawberries in a separate container since I'm allergic :) If you try this let me know!
