Southern Caviar Dip


Since we will be going to our first Clemson game of the season this weekend AND I will be bringing this dip, I am sharing the recipe with you. It is a perfect dip for tailgating or to make for any get together or party. I made this for our first new house get together in August and it was a big hit. I have also seen it called Texas Caviar. If you see something in the recipe you don't like you can easily adapt it by leaving it out, adding more of another ingredient or adding something completely different. Or make it spicier by adding jalapenos. Not only is this super healthy but it can be made ahead and keeps for many days!



Southern Caviar Dip
serves 12

Ingredients:
1 can black eyed peas
1 can chickpeas
1/2 can to 1 can yellow corn
1/2 can to 1 can shoe peg corn
3 cans Rotel tomatoes with green chilies (mild or hot according to preference)
1 can black beans
3 scallion bunches, chopped
16oz bottle zesty Italian dressing (or until desired consistency)

Drain and rinse all canned items and combine. Add scallions and dressing. Mix well. Refrigerate for at least 1 hour before serving but it tastes even better when it sits overnight. Serve with chips, pretzel chips or just eat it by the spoonful like I do! This is also really great in tacos or as a side to any Mexican dish. ENJOY!



I love that almost all of these ingredients are pantry ingredients that you can keep on hand to make this in a pinch. Hope this makes a colorful appearance at your next party or tailgate. GO TIGERS!
